Guillaume Brahimi will return to Double Bay for a four-night French bistro pop-up at Baker Bleu, with the bakery set to host a short run of his classic French dishes.
The residency will run from Thursday, 6 August to Sunday, 9 August at Baker Bleu, 2 Guilfoyle Avenue, Double Bay. During the event, the daytime bakery will operate as a French bistro by night.
Brahimi, who is mainly based in Melbourne at Bistro Guillaume, will be in the kitchen for the limited run. It will be the first time in six years that Sydney diners have had the chance to eat his cooking.
Bistro Dishes Back On The Menu
The four-course menu will focus on dishes associated with Brahimi’s bistro cooking, including onion soup, cheese soufflé, roast chicken with tarragon jus and steak au poivre.
Sides will include Paris mash, frites and green salad, while desserts will include profiteroles, passionfruit soufflé and lemon tart.
The menu is priced at $190 and includes bread, a snack, entrée, main, dessert, petit fours and sides. A short wine list will be available by the glass or bottle, with selections drawn from Brahimi’s personal favourites.
Several dishes in the residency are also featured in Brahimi’s recent book, Plat du Tour, which was released in April.
Limited Sittings At Baker Bleu
The Double Bay pop-up will have nine tables available per service, with seven sittings planned across the four-night residency.
Bookings opened on 2 July and are available by phone only on 0458 400 327. Sittings are listed at 5:45pm and 8pm.
Baker Bleu co-founder Mike Russell has described the event as a chance for the neighbourhood bakery to open at night and take on a French-style bistro format, with the venue’s bread served alongside Brahimi’s food.
A Return Tied To Sydney Dining
Brahimi has a long association with Sydney dining. After moving to Sydney in the 1990s, he later took over the Sydney Opera House restaurant space and opened Guillaume at Bennelong in 2001.
That restaurant continued until its final service on New Year’s Eve in 2013. Brahimi later opened Bistro Guillaume in Sydney’s CBD in 2016.
He is currently operating Bistro Guillaume in Melbourne and continues as a culinary ambassador for Crown Sydney. Bistro Guillaume Perth concluded its 14-year run in April.
The Baker Bleu residency will bring Brahimi’s bistro cooking back to Sydney in a small Double Bay setting, with the pop-up running from 6 to 9 August.
